This bath of very humid steam comes from Orient (Turkish bath).

THE CHEF: Well known to gourmets, the cuisine made by head chef Gilles Goess, resulted from a passion he always had ...
With a classical culinary education, Gilles Goess started his career in Paris.
After 5 years at the Royal Monceau as Chef de Partie, Gilles Goess joined the Head Chef Le Faou, at the Pavillon Henri IV ****, in Saint-Germain en Laye, as Sous Chef.

In 1987, he joined the Head Chef Legay at the Ritz hotel, as Chef de Partie. After that, he went to the French Foreign Office as first Sous Chef.
On joining the Hostellerie de La Briqueterie, he worked for 10 years with the Head Chef Christophe Bernard.

Since May 2005, Gilles Goess, 44 years, has been promoted to Head Chef. He is in charge of the menu, chooses the suppliers and products and manages a team of 14 people.
Combining traditional cuisine, herbs from the garden and regional Champagne products, the cuisine is a senses' celebration.

Follower of the maestro Auguste Escoffier, he has been made the echo of culinary French tradition, and has been rewarded of one star at the 2007 Michelin guide.
